The Middle East is a group of countries that range through from North Africa to large areas of Asia. Hundreds of years of travel by traders through the region has meant that there are similarities between some of the dishes. However although they may have similar names they can taste quite different because the ingredients vary throughout the region. Middle Eastern food today is defined by its past.
We will be cooking recipes from Syria, Turkey, Lebanon and Iran among others.
Recipes that may be covered on the day include:
Demonstration
Fruit Salad with Orange, Honey and Orange Blossom Water from Morocco
Fattoush (Palestinian bread salad with sumac dressing)
Cooking session
Lamb Kofta with Tomato sauce
Middle Eastern Flatbreads with Garlic and Za’atar
Muhammara (Red Pepper and Walnut dip)
Moutabal (Grilled, blackened Aubergine and Tahini Dip)
Cacik (Turkish yogurt, cucumber, garlic and dill dip)

- Please let us know of any dietary requirements, allergies or special accommodations required at the time of booking. We will be as flexible as possible, when we can, so as to be inclusive to all students but we may not be able to substitute ingredients in the recipes.
- We do everything we can to reduce the risk of cross contamination, however we cannot guarantee a completely allergen free environment and therefore our kitchens may be unsuitable for students with severe or life-threatening allergies.

Age limit
Our one-day workshops and short courses are 16+ unless otherwise specified. Children aged 14 or 15 may attend with an adult over 18.
Course times
On the day, the school will be open from 9.30am and the class will begin at 9.45am. The class will be finished by 3.30pm, depending on the course and class size it may finish earlier.

Larousse Gastronomique defines a sauce as "a hot or cold liquid either served with, or used in the cooking of, a dish."It certainly helps to add flavour and enhances the dish. On this one day workshop at The Edinburgh New Town Cookery School we will teach how to make a variety of sauces. We will cover stocks, and how to thicken and enrich sauces whether by reduction, using a roux, adding butter or cream. We will also cover emulsion sauces and some sweet sauces. There will be a break for lunch which you can enjoy in our dining room with a glass of wine.

Delicious buttery, melt in the mouth Scottish shortbread is a thing of wonder. In this 1 ½ hour class we teach you how to make shortbread using an old family recipe.

Arrive at 9.45 am for coffee or tea whilst you watch a short demonstration and run through the day’s recipes. You will then cook dishes that will be suitable for lunch, which you can enjoy with a glass of wine.

This course is for those who feel they are complete beginners at baking. We will cover some of the basic techniques of cake and bread making so that you will feel more confident to cover other recipes at home. At the end of your baking day you will leave with a collection of fantastic baked goods. Arrive at 9.30 am for coffee and the class will start at approximately 9.45am. Lunch will be provided with a glass of wine or beer.

In this masterclass we will explain the science behind making the best scone and we will make three different flavours so by the end of the class you will be a scone wizard!
Evening Classes

It is so tempting to buy takeaways but in this 1 ½ hour class we will teach you how to make a quick and delicious curry from scratch which you will return to again and again.
