🥞Fluffy Protein Pancake Recipe🥞 Let’s face it, we all need a bit of comfort food in this challenging time 💁‍♀️ What better way to sweeten our days than a scrumptious stack of pancakes? And these ones are here to have us grinning with their airy, fluffy texture and a taste reminiscent of cheesecakes. I hope we got you here! If not, here’s the final one - they are protein packed and fairly low in calories 💪 Make sure to check out our Stories to follow the process with us! 📔 . 🥚Ingredients:🥚 5 medium eggs 400g cottage cheese 30g protein powder* 85g plain flour 2 tablespoons of sugar (or a substitute) ½ teaspoon cream of tartar** pinch of salt *you can use flavoured for extra taste (vanilla or white chocolate work great!) **optional . 👩‍🍳Method:👨‍🍳 1. Preheat your pan on a low-medium heat and assemble all your ingredients. It’s best when they’re at room temperature so take your items out of the fridge 15 minutes before. 2. Separate the egg whites from the egg yolks into two separate medium bowls. Place egg whites into a bowl, add a sprinkle of salt and cream of tartar (both optional) and beat the whites until you get stiff peaks. Set aside. 3. In a separate bowl, add sugar to the yolks and beat them until light and fluffy. Add cottage cheese to the yolk & sugar mixture and mix briefly. Sift through the protein powder and flour and beat everything until well combined. You’ll see the cottage cheese texture beginning to diminish. 4. Add the beaten egg whites to the mixture and gently fold them in until combined. 5. Using two tablespoons of batter per pancake, fry each pancake on a minimal amount of oil (I use a spray or omit it completely on a good quality non-stick pan) covered under a lid (crucial!). When pancakes are slightly dry around the edges after about 2-4 minutes depending on the level of heat, flip them over. Be very gentle! 5. In the current crisis and danger to health by Covid-19 we have carefully listened to advice from the Government who have advised that people stay away from public areas and gatherings. The health and safety of all our customers, students and staff is of paramount importance to us and therefore, a few days ago we postponed our courses until the week of the 20th April. We have now emailed everybody on courses (up to and including the 19th April). Of course, we will be continuing to review our programme on a day-by-day basis taking in the latest advice. 📢 Our plan is to put a lot of courses on until the end of the year to manage the demand from the postponed courses so please bear with us and keep an eye on our Course Calendar on the website. 🗓 For up to date content from us, fresh recipes and our latest news, please follow us on Facebook and Instagram. This is a very hard situation for everyone but we are in it together and by supporting our communities we will get through it. ❤ Therefore, we’d like to utilise our knowledge and better our community here.
