Larousse Gastronomique defines a sauce as "a hot or cold liquid either served with, or used in the cooking of, a dish."It certainly helps to add flavour and enhances the dish. On this one day workshop at The Edinburgh New Town Cookery School we will teach how to make a variety of sauces. We will cover stocks, and how to thicken and enrich sauces whether by reduction, using a roux, adding butter or cream. We will also cover emulsion sauces and some sweet sauces. There will be a break for lunch which you can enjoy in our dining room with a glass of wine.

This half day class is perfect for those who want to learn good traditional Scottish Baking. It has tradition at its heart. The baking will take 3 hours and then you’ll have an hour to relax and eat your home baked afternoon tea with a glass of fizz and a cup of tea or coffee in our beautiful dining room with views over Queen Street Gardens.

Delicious buttery, melt in the mouth Scottish shortbread is a thing of wonder. In this 1 3/4 hour class we teach you how to make shortbread using an old family recipe.
Children and Teenagers

These practical cooking courses are designed for teenagers aged between 13 and 17 years old and course duration vary throughout the year. Students will learn basic cookery skills including how to weigh ingredients accurately, how to read recipes and how to clear up as they cook.

Arrive at 9.45 am for coffee or tea whilst you watch a short demonstration and run through the day’s recipes. You will then cook dishes that will be suitable for lunch, which you can enjoy with a glass of wine.
Short Cookery Courses

This three day course will teach the basic cookery skills which are essential for every cook to know. Each day you will cook a variety of dishes some of which you will eat for lunch and the rest you can take home.
