Perfecting Pastry Four Day Course – Master Classic Patisserie Skills
Discover the art of classic French pastry with our immersive four-day patisserie course in Edinburgh, designed for both passionate home bakers and aspiring professionals. Through a carefully structured programme of hands-on practice and expert-led demonstrations, you’ll develop essential pastry-making skills and knowledge day by day, from mastering shortcrust pastry and delicate pâte sucrée to creating light choux and buttery laminated doughs.
Over the four days, you’ll produce an impressive range of pastries, including elegant mille-feuilles, indulgent chocolate tarts, and savoury classics like quiche Lorraine and cheese twists. Along the way, you’ll refine core techniques such as lining and rolling pastry cases, blind baking, temperature control, and resting doughs, as well as presentation skills to make your patisserie stand out.
Guided by our experienced tutors, you’ll gain insight into the finer details that transform good pastry into exceptional patisserie. By the end of the course, you’ll leave not only with a beautiful collection of pastries, but also with the confidence, knowledge, and inspiration to recreate authentic French patisserie with flair in your own kitchen.

- We do everything we can to reduce the risk of cross contamination, however we cannot guarantee a completely allergen free environment and therefore our kitchens may be unsuitable for students with severe or life-threatening allergies.

Age limit
Our one-week courses and short courses are 16+ unless otherwise specified. Children aged 14 or 15 may attend with an adult over 18.
Course times
On the day, the school will be open from 9.30am and the class will begin at 9.45am. The class will be finished by 3:30pm, depending on the course and class size it may finish earlier.
