Artisan Bread Week Cookery Course – Master the Art of Bread Making
Immerse yourself in the world of artisan bread making with our intensive five-day Artisan Bread Week Cookery Course at Edinburgh New Town Cookery School. Perfect for passionate home bakers and culinary professionals, this hands-on course takes you from the foundations of simple doughs to advanced artisan techniques.
Throughout the week, you’ll create a wide variety of breads, including: classic white loaves, wholemeal dinner rolls, enriched doughs such as brioche and doughnuts. You’ll also discover the secrets of pre-ferments like bigas and sourdough starters, learning how to achieve depth of flavour and texture.
Our expert tutors will guide you through essential bread shaping skills – from plaited loaves and fougasse to bagels, cinnamon buns, and perfectly rounded dinner rolls. You’ll also gain an understanding of sourdough schedules, hydration percentages, and even how to turn leftover sourdough discard into delicious English muffins.
This course is more than just a class – it’s a celebration of bread in all its forms. With the guidance of our experienced teaching team, you’ll refine your techniques, develop confidence, and gain the knowledge to produce exceptional artisan bread at home or in a professional kitchen.

Age limit
Our one-week courses and short courses are 16+ unless otherwise specified. Children aged 14 or 15 may attend with an adult over 18.
Course times
On the day, the school will be open from 9.30am and the class will begin at 9.45am. The class will be finished by 3:30pm, depending on the course and class size it may finish earlier.
