Former ENTCS students open new Edinburgh restaurant

We have been following the progress of former students Roly and Rob with interest since they graduated in September 2016.  The two chefs met at Edinburgh New Town Cookery School whilst attending the Six Month Professional Diploma course. Both graduated with distinction.  Their latest venture is Edinburgh’s newest pizza restaurant: east PIZZA which opens on Saturday 7 October 2017 in Commercial Street, Leith.

Focused on thoughtfully sourced local and seasonal food and working with many local suppliers, the restaurant will produce high quality, homemade pizzas.  Seasonality will be core to the new offering and Roly and Rob will be using Scottish quality produce including freshly picked salads and even Scottish mozzarella.  Wherever possible they will source food within thirty miles of their Leith location, and their meat and vegetables will all be organic.

Suppliers with whom east PIZZA work include: Cross Border Brewing Company, East Coast Cured, Highland Ridge Larder, Kedar Cheese Company, William and Johnson coffee, Peelham Farm, Phantassie Organic Produce and Stewart Brewing.

Both chefs moved into the food industry from very different careers: Rob was an engineer and Roly worked in property.  The six month diploma course gave them both the opportunity to take a total career change and to work in something they felt passionate about.  After graduating Roly began the catering business, Toasted Radish, while Rob worked at the Purslane restaurant.  We think this new venture sounds very exciting and can’t wait to visit to see how what they have learned has been put into practice.
