Three Month Intermediate Diploma at Edinburgh New Town Cookery School

Our Three Month Intermediate Certificate Cookery Course is the ideal next step for those with a solid foundation in the kitchen. Whether you are an ambitious home cook looking to elevate your skills, or you have basic training and are seeking a more formal qualification, this eleven-week full-time course is designed to refine and expand your culinary abilities. Building on the techniques introduced in the beginner’s course, you will explore classic cookery and more modern culinary techniques in greater depth through a combination of expert-led demonstrations, hands-on practical sessions, and structured kitchen experience. You will develop more advanced skills in areas such as meat and fish preparation, sauces, baking, and menu planning. In addition,  you will also gain valuable experience cooking with a variety of equipment, including Aga, induction, and gas cookers. The course runs from 9:30 am to 4:00 pm each day, offering an immersive, supportive environment to help you grow in confidence and competence. Alongside regular short assessments to reinforce your learning, the course culminates in both a practical and theory examination. Upon successful completion, you will be well prepared to continue your culinary journey—whether that means progressing to the next level of professional training or applying your skills in a professional kitchen or going into the food and drink industry. Who is this course for?

Students will work in a team to plan, prepare, and serve a lunch service—developing organisation, timing, and communication under real-world conditions. You will also cover business planning, costings, and nutrition.
