One Month Cookery Course at
Edinburgh New Town Cookery School

This is a four week very intensive, hands-on course where the majority of your time will be spent cooking, supported by practical demonstrations and occasional talks. It is designed to equip you with the fundamental skills of cookery in a structured and immersive environment. The course will particularly appeal to gap year students who want to upskill, or those specifically keen to work in shooting lodges, summer villas, ski resorts in a role such as chalet host or on board luxury yachts. It is ideal for school leavers, university graduates, and anyone keen to build a solid foundation in culinary techniques—whether for work or personal growth ready to take the next step into a professional kitchen.

From day one, you will train in a professional kitchen, mastering essential techniques in cookery, patisserie, pastry and bread-making, meat and fish preparation, sauces, ice cream, puddings and more. All students complete the REHIS Elementary Food Hygiene Certificate (Level 2) as part of the training, and the course concludes with both a practical and theory examination to assess your skills and knowledge. Who is this course for?

This short intensive course is suitable for school and university leavers, career changers and those who want an intense training in practical cookery and would wish to find entry level jobs in professional kitchens. We are often joined by school leavers who are not having a gap year but would like to advance a key skill to help them find work during their time at University and over the holidays. Many of our One Month Course students go on to work in ski chalets, summer villas or in shooting and fishing lodges. It is ideal for people who can cook but are self-taught and want to learn the important cookery foundation skills. No previous experience is required.

Those who join us might be:

• School leavers who are on a gap year looking to improve skills to help them to find work on their travels

• School leavers going on to University who want to be able to work during term-time and in the holidays in a kitchen.


• Those who want to be able to work in ski chalets, summer villas, luxury yachts, shooting and fishing lodges or similar

We are fortunate to be based in a beautiful, historic five-storey Georgian townhouse in the centre of Edinburgh’s New Town. Our teaching kitchens are bright, airy and spacious . Edinburgh itself is one of the UK’s most exciting food cities—home to vibrant markets, innovative food businesses and no fewer than seven Michelin-starred restaurants. You will be learning in an environment surrounded by food culture, creativity, and opportunity.

Our tutors bring diverse experience from across the food world—patisserie, fine dining, food styling, artisan baking, recipe development and more.
