4 WEEK INTERMEDIATE CERTIFICATE IN PRACTICAL COOKERY
Building on confidence and introductory skills, the intermediate certificate broadens your technical abilities and elevates your accuracy and confidence in a professional kitchen.
This term may be taken independently by those who already have a sound grasp of basic cookery, or as a natural progression from the introductory certificate – an ideal bridge to the advanced diploma. It’s designed to elevate your confidence, creativity, and capability to a professional standard.
You’ll explore simple butchery and fish filleting, stocks and sauces, enriched doughs, introductory laminated pastries, multi-element desserts, and special diets, alongside plating techniques, kitchen management systems, sustainability, and ethical sourcing.

Students will work in a team to plan, prepare, and serve a lunch service—developing organisation, timing, and communication under real-world conditions. You will also cover business planning, costings, and nutrition.
From the very first day, you’ll be immersed in the kitchen. With guidance from our expert tutors, you’ll work hands-on every day to build up your skills, refine your technique, and start thinking like a professional chef.
