If you’re looking for the perfect summery sweet treat, these simple and delicious vanilla poached peaches with raspberries could be exactly what you’re craving! Best served with vanilla ice cream, crème fraiche, or Greek yoghurt, but still absolutely delicious on it’s own.
Ingredients (Serves 4)
8 small or 4 large ripe peaches
55g/ 2 oz caster sugar
Vanilla pod
170g/ 6 oz raspberries

Instructions
- Dip the peaches into boiling water and then into cold water.
- Remove the skins and cut the peaches in half. Take out the stones.
- Put the peaches in a large saucepan, add the sugar, vanilla pod and enough water to just cover the peaches.
- Bring slowly up to the boil, ensuring the sugar has dissolved and poach the peaches for 15 minutes.
- Remove the peaches and vanilla pod from the syrup and bring to the boil. Boil for 3 – 4 minutes and remove from the heat. Add the raspberries and allow to cool for 10 minutes. Pour over the peaches and serve warm or cold.
