This course lasts 5 weeks and you can move straight from the beginners into this course thereby completing a 10-week course. We will expect a higher level of confidence in the kitchen and the dishes cooked will be ideal for dinner parties. You will take your food home with at the end of the evening. Students will learn recipes and techniques such as risotto, pasta, sauces, fish and shellfish preparation etc. Examples of techniques and dishes included in this course in the past are:
Filleting fish
Bread
Shellfish stock to make Prawn Risotto
Sauteed Vinegar Chicken
Pan Fried Duck Breast
Cheese Souffle
Individual Apple Tarts using Sweet Shortcrust Pastry with Homemade Creme Anglaise
Foolproof Chocolate Fondants

Dietary Requirements and Allergies:
- Please let us know of any dietary requirements, allergies or special accommodations required at the time of booking. We will be as flexible as possible, when we can, so as to be inclusive to all students but we may not be able to substitute ingredients in the recipes.
- We do everything we can to reduce the risk of cross contamination, however we cannot guarantee a completely allergen free environment and therefore our kitchens may be unsuitable for students with severe or life-threatening allergies.
Age limit
Our one-day workshops and short courses are 16+ unless otherwise specified. Children aged 14 or 15 may attend with an adult over 18.
