4 WEEK ADVANCED CERTIFICATE IN PRACTICAL COOKERY
The Advanced Certificate in Practical Cookery is designed for experienced cooks ready to refine their technique and work at a professional, industry-ready level. This intensive module is the natural progression from the Intermediate Certificate and also forms the final module of the 12-week Diploma, making it ideal whether you’re completing the full qualification or booking it as a stand-alone advanced certificate.
Who is this course for?
Suitable only for those who have completed a previous professional cookery course, this hands-on programme focuses on precision, confidence, and creativity in the kitchen. You’ll work with premium ingredients and advanced methods, developing the skills expected in professional kitchens and high-end culinary environments.

- Advanced butchery and preparation and cookery of offal
- Advanced classical and contemporary sauces
- Advanced fish and shellfish preparation and cookery
- Laminated pastries and advanced French pâtisserie
- Chocolate work and decorative techniques
- Product development, menu innovation and entrepreneurship
- Food photography for professional presentation and portfolios
