Dawn Allison – Teaching Assistant

Dawn was born in Dublin to a farming family. She trained at the Edinburgh Royal Infirmary to become a State Registered Nurse. She then did her midwifery training in the Royal Maternity Hospital, Belfast. She came back to Edinburgh to be a Midwife at Simpsons Maternity Hospital. Once Dawn’s children were born she worked part time in scientific research. Always a very keen foodie, she also did some catering for office lunches and birthday parties. She eventually decided to do the One Month Certificate at ENTCS in May 2011. After she came and helped us with a couple of corporate evenings in June 2011 we asked if she would like to work with us on a permanent basis. Dawn now works at the school one days a week but manages to do enough work for five days! She and Mel make sure the kitchens run smoothly. She does all our baking so that when people pop in for coffee or lunch, they get her lovely home baking. When she is not with us, she bakes for two city centre cafes. Her scones are the best we have ever tasted!

Favourite ingredients:
Good butter, good olive oil, all vegetables

Least favourite ingredients:
Any egg that isn’t free range, any food calling itself fat free, anything with a listed ingredient that is impossible to pronounce

Favourite thing to cook:
Vegetable frittata followed by a deliciously light victoria sponge

Favourite ENTCS recipe:
Many but the chocolate brownie recipe we have is simply impossible to resist!
