Former ENTCS students open new Edinburgh restaurant

We have been following the progress of former students Roly and Rob with interest since they graduated in September 2016.  The two chefs met at Edinburgh New Town Cookery School whilst attending the Six Month Professional Diploma course. Both graduated with distinction.  Their latest venture is Edinburgh’s newest pizza restaurant: east PIZZA which opens on Saturday 7 October 2017 in Commercial Street, Leith.

Leaving school is an exciting time for young people.  I know many who have their heart set on university and a few years studying and enjoying student life.  For others, it is the chance to start a dream career.

Given the constraints on student loans (and parents’ wallets!), earning money through holidays or while studying is essential.  And finding summer employment easily can be helped by having a marketable skill up your sleeve.  As big group holidays become more and more popular, being a cook is a terrific way to secure a summer job – and often one in a glamorous location!

Many people dream of running their own restaurant, bistro or cafe and those dreams are born out of a passion for food and hospitality.

However, the desire to delight people with culinary creations is not enough in itself to succeed as a professional chef.  The world of gastronomy is competitive and cost-driven and many dreams have been dashed because more focus went on the presentation on the plate rather than on what the accountants will see on the bottom line.

We are at a very busy part of the Intermediate Certificate course. The majority of the students are also nearing the end of their Six Month Cookery Diploma and we like to keep them busy! Last week they all went off to various restaurants and bakeries around the city to do some work experience. Yesterday Charlotte Flower, a chocolatier who is based in Aberfeldy, came to give the students a chocolate workshop. They made ganache, which they flavoured with all sorts of things including, herbs, alcohol, fruit, spices, nuts and, even in one case, truffle oil!
